Hello and welcome to Noon Whistle. I'm Paul Kreiner, one of the owners. We started out with three childhood friends. We would go up to a small town called Marquette, Wisconsin. We'd wait for the noon whistle to go off every single day. That's when we'd crack beers and enjoy time with each other. And then this became our dream. So this is our brew pub in Lombard, Illinois, and we also have a second location, which is our production facility located in Naperville, Illinois. Been in production for close to eight years. In Marquette, where the Noon Whistle name came from, me and my cousins used to go to a very small bait shop that had one pinball machine. And we'd actually go and play pinball almost daily when we were on vacation. So we would beg for, you know, money from our parents just to go play this one game. And it's kind of been a love ever since. So when we originally did the expansion here, that was the first thing that I thought about is that I needed to have pinball associated with the Noon Whistle. I mean, just the lights on pinball and, you know, the flashing and the sounds—that's what attracts people to that side. It lightens up the entire place, but yet it also brings in great revenue for our business. It's a great spot for, you know, kids to go play something where the adults get to enjoy company with each other. Families come in and play with their children as well. We consider this our R&D. So we get to play around with a bunch of different styles. We started with low ABV beers, which we still have a concentration on. That's the whole Noon Whistle—that's where it comes from—where you can have beers and drink throughout the entire day. But yet now we've gotten into a lot of different styles. And what we're really known for is our hoppy and also our sour beers. Our biggest lineup is our gummy series—different beers that are dry hop differently, same rough style. They're hazy IPAs, and they all have different names. So Gummy Apocalypse, for example, is what we're selling currently. We also have Squishy Gummy. The grain that we use gives a gummy consistency in the mash, and that's where that name came from. All right, let's go check out the rest of the brewery. First up in the brewing is the mash tun. That is where we get our wort, which is the sugar water. Once we boil the wort, we can add hops. We can add fruit. We can add honey. Next, we send it through pipes over to the fermenters. We add yeast with the wort. This is where it stays about fifteen to twenty days. From the fermenter, we send it over to a bright tank. This is where we have an opportunity to clarify the beer if we want to clarify the beer. We also carbonate the beer if we need to carbonate it more. From the bright tank, we put it into cans, put it in the kegs, and that's where it goes to our tap lines here at the brewery, local stores, and local bars. I try to play every single day—a game here or there. Stranger Things is what I generally play. We have a monthly tournament here in our Lombard facility where we have people come out and we have giveaways to the winners of the competition. They get to come out, enjoy our beer, and, you know, have a good time. It is one of my pinball hangouts. Noon Whistle is terrific. The beers are fantastic, and he's got all Stern, which is also a terrific lineup. They've got a killer product. It's starting to expand the game, which is super fun. So I'm loving it. It's just a blast. I'm just kind of the pinball guy. That's what I do in a way. It's kind of a dream come true because it combines my two favorite things, which are drinking beer and playing pinball. You get so many young kids that come in here that kind of see it for the first time, which is great.
